Pumpkin Muffins with Cinnamon Streusel

The return of autumn weather means the return of all things pumpkin! Level up your breakfast with these lovely spiced muffins studded with chocolate chips and topped with an aromatic cinnamon streusel. City Feed carries canned pumpkin pie mix, which already has spices in it, but if all you have is pumpkin purée, simply double the spices in this recipe!

Ingredients:
For the muffins:
15 oz can pumpkin pie mix
1/3 c melted butter
1/2 c milk
1 1/4 c sugar
1 T molasses
1/2 t vanilla extract
1 3/4 c flour
1 T baking powder
1/2 t salt
1/2 t cinnamon
1/4 t nutmeg
1/4 t ginger
1/8 t ground cloves
1 c chocolate chips

For the streusel:
1/2 c flour
1/2 c sugar
3 T melted butter
1/2 t cinnamon

In a large mixing bowl, whisk together the pumpkin pie mix, butter, milk, sugar, molasses, and vanilla. In a separate bowl, mix all other muffin ingredients save the chocolate chips. Fold the dry ingredients into the wet, and once combined, stir in the chocolate chips. Spoon the batter into a greased muffin tin. In a small bowl, combine the streusel ingredients. Crumble the streusel mixture over each muffin.
Bake at 375 for 30-35 minutes, or until a toothpick comes out clean.  Enjoy warm!
