Vegan Mac and Cheese with Roasted Garlic

City Feed is a great place to stock up on all your vegan staples, like raw cashews and nutritional yeast!  They’re perfect for a creamy, cheesy sauce for everyone’s favorite comfort food: mac and cheese.
I added 3 whole heads of roasted garlic to elevate it a little- roasted garlic is aromatic and rich, and it gives depth to this classic recipe.
Ingredients:
1 lb pasta
1 1/2 c raw cashews
2 c plant-based milk
3 T lemon juice
1/3 c nutritional yeast
3 heads garlic
3 T olive oil
1 1/2 t salt
1/4 ground black pepper
1 1/2 c panko bread crumbs
4 T vegan butter
1/4 t paprika
Cover the cashews with boiling water and let stand while you prep the rest of the ingredients. If you have a high powered blender you can skip this step.
Preheat your oven to 400 degrees Fahrenheit. Cut the tops of the whole heads of garlic, then drizzle with 1 T olive oil for each head and wrap in foil. Roast in the oven for 45 minutes. Cool. Lower oven temperature to 350.
Cook pasta according to the package, draining them at one minute less than the package directs. The pasta will continue to cook in the oven.
Drain cashews, then add them to a blender or food processor. Add milk, lemon juice, yeast, salt, and pepper. Squeeze out the toasted garlic into the mix. Blend until smooth. Melt the butter, then mix with panko and paprika until we’ll combined. Add the sauce to the drained pasta, mix, and pour into your baking dish. I used a Dutch oven but a 9×13 pan would also work! Sprinkle  the panko mixture to cover the pasta, then bake uncovered for 15-20 minutes.
