The Least Intimidating Sushi

Looking for a fun date night in that recreates your favorite takeout? Try making your own sushi! It’s really not as hard as it looks, and the hardest ingredient by far to find is nori sheets. Luckily, City Feed carries Blue Dragon nori sheets, found in the first aisle, right by the pasta! I chose to make spicy tofu rolls with cucumber and avocado, smoked salmon rolls with cucumber and avocado, and plain old cucumber and avocado rolls, but the possibilities really are endless. Be creative with it, and have fun!

Ingredients:
1 package nori sheets
2 c white rice
1/3 c rice vinegar
4 t sugar
1 t salt
Sesame seeds (optional)

1 package firm tofu
1/2 c Mayo
Sriracha to taste
Salt to taste
Splash lime juice
1/5 t garlic powder
Panko bread crumbs

Other filling options (julienne all fillings before rolling): smoked salmon, imitation crab, veggies like cucumber, avocado, carrots, scallions, red cabbage, roasted asparagus, mushrooms, sweet potato

Toppings: wasabi, pickled ginger, sriracha Mayo, soy sauce

Cook rice according to your usual method. Heat vinegar, sugar, and salt until sugar and salt dissolve, then add to cooked rice and fold gently until combined. Let cool to room temperature.

Press tofu for 30 minutes to remove most of the moisture, then crumble into a bowl. Mix Mayo, sriracha to taste (I used 4-5 T), lime, garlic powder, and salt to taste. Combine with crumbled tofu. Refrigerate until use.

To Assemble the Sushi:
Lay a nori sheet onto the work surface, shiny side down. Spread rice 1/4 inch thick on the sheet, leaving the top inch free. Sprinkle with sesame seeds. At the bottom edge, layer fillings. For spicy tofu sushi, add the tofu mixture, a line of panko, then cucumber and avocado. For smoked salmon sushi, add smoked salmon, cucumber, and avocado. Wet the top inch of nori with water, then roll the sushi from the bottom tightly. Use water to seal the edge from the outside, then slice with a sharp knife. Serve with soy sauce, pickled ginger, and wasabi.
