Curry “Chicken” Salad

This faux-chicken is one of my favorite quick meals! It makes great leftovers, and can be enjoyed in a variety of different meals. City Feed often has delicious grapes.  When they do I add lots of grapes to this recipe!
If you don’t have grapes, I often substitute with raisins for an equally tasty salad.
Ingredients:
2 15oz cans garbanzo beans
1/2 c celery, finely diced
1 c grapes
3 T apple cider vinegar
1/3 c mayonnaise or vegan mayonnaise
1 t curry powder
1/4 t cumin
1/2 t yellow mustard
Salt and pepper to taste
Drain and rinse the beans, then mash in a food processor or with a fork until most of the beans are broken down, but some chunks remain. It shouldn’t be a paste, it should still have some texture! Transfer to a medium sized mixing bowl. Halve the grapes, then add them and the celery to the bowl. Stir to combine. Add mayo, vinegar, mustard, and spices, and mix thoroughly. This salad tastes great immediately, but even better as leftovers! Serve as a sandwich, with crackers or pita, or over a fresh salad.
